摘要:
为了快速区分食用油中油酸、亚油酸和亚麻酸这三种重要的不饱和脂肪酸,通过激光拉曼光谱实验和密度泛函理论计算两种方法分析并且比较了这三种不饱和脂肪酸的分子振动光谱。结合532 nm和785 nm两种光谱仪的实验结果与理论计算数据,这三种不饱和脂肪酸位于1 660 cm-1和1 440 cm-1两处振动模式相对强度的比值随三种不饱和脂肪酸中C=C双键个数的增加而增加。这提供了一种快速区分不同类型不饱和脂肪酸的方法, 将对食用油品质的快速检测有重要帮助。
Abstract:
To differentiate three types of important unsaturated fatty acids, oleic acid (OA), linoleic acid (LA), and α-linolenic acid (ALA) in edible oils, we investigated their molecular vibrational modes by Raman scattering experiment and density functional theory (DFT) calculation. Combining the theoretical calculation data with the experimental results obtained from 532 nm and 785 nm laser excitations, we found that the relative intensity ratio of two characteristic vibration modes at 1 660 cm-1 and 1 440 cm-1 increased systematically with increasing the number of C=C double bond in OA, LA, and ALA. The present work provides a simple approach for quick differentiation of different types of unsaturated fatty acids, which is very helpful for quick quality evaluation of edible oils.
